This green bean casserole satisfies dairy and non dairy eaters—it’s so good!!

Ingredients:
- 2 cans French cut green beans, drained
- 1 medium sweet onion, thick chopped
- 1/4 cup dairy free butter
- 1/2t salt
- 1 pkg dried onions (French’s is dairy free)
- 3/4 cup all purpose flour
- 3/4 cup dairy free butter
- 2.5 cups chicken broth (I used Orrington farms)
- 1/2cup Country Crock Plant Cream
- optional: swap onions for mushrooms
Instructions:
- Preheat oven to 350 degrees.
- Caramelize onions over medium heat with first portion of butter and salt. Stirring often until they’re brown.
- While that’s cooking, prepare chicken broth and cream. You’ll need to have these ready to go for the next part.
- Add second portion of butter to the pot of onions and stir until melted.
- Slowly add flour and whisk it until a paste forms, making a roux.
- Pour in chicken broth about 1/4C at a time and whisk each time to smooth out any lumps before adding more. This will become thick and pasty, then thin out into a thick cream of mushroom like consistency.
- Pour in the cream and let simmer on very low for 3-4 minutes.
- Put the green beans in an 8×8 square dish.
- Add the creamy onion mixture you made in step six and stir to distribute evenly.
- Top with dried onions and cook for 30 minutes or until bubbly and lightly browned.
So good, you don’t have to tell them it’s dairy free 😉
