Tools
Mixing Bowl or Stand Mixer
kitchen scale
meat thermometer
Baking Sheet or Pizza Stone

Makes
2 medium round pizzas or one large pizza

Ingredients

  • 150g (5.2oz) ’00’ Pizza flour
  • 150g (5.2oz) all purpose flour
  • 8g salt
  • 5g active dry yeast
  • 4g olive oil
  • 200g (just under a cup) warm water
  • *cornmeal to sprinkle if not using a silicone baking mat

Instructions

  1. Mix the first three ingredients together.
  2. Use a thermometer to make sure your water is between 95-105°F (35-40°C) to activate the yeast.
  3. Add the yeast and oil to the water, stir well and pour into the dry ingredients.
  4. Mix with a wooden spoon or the dough hook on your stand mixer.
  5. Mix until fully incorporated and no longer sticking to the dough hook.* If using a mixer, you may need to add a little extra pizza flour to keep it from being sticky.
  6. Let it rise for about 30 minutes.
  7. Separate it into two sections, oil and cover with plastic wrap to let it fully rise. At this point you can also freeze the dough until the day of baking. See note.
  8. Once it’s fully risen–doubled or more in size–sprinkle cornmeal flour on the baking sheet or pizza stone (you can also use silicone baking mat) to keep it from sticking.
  9. Roll out to desired size. One recipe can make 3 thin crust medium pizzas, 2 regular crust medium pizzas, or 1 regular crust large pizza.
  10. Bake for 10-12 minutes and enjoy!

Notes:

  • If mixing by hand, knead on a well-floured surface for 3-5 minutes.
  • On the morning of baking, remove the dough from the freezer. Once fully thawed, work it out on a floured surface or silicone mat for 2-3 minutes. Cut into the size you need, then oil the top and cover with plastic wrap and let it rise further.
