easy dairy free chicken tacos with corn or flour tortillas

I legitimately make these or my chicken quesadillas a couple of times a week! Perfection.
Ingredients:
1 chicken breast, cooked and shredded (I usually use a rotisserie chicken for this, but chicken breast works just the same
taco seasoning (maybe 1-2 tablespoons, eyeball it)
3-4 T olive oil
Instructions:
Shred the rotisserie chicken or cooked chicken breast. Heat the olive oil in a frying pan over medium heat. Add the chicken and seasoning. I put enough seasoning to coat the chicken. Cook until heated or a little crispy, if you like it that way.
Serve in tortillas or make chicken quesadillas. To keep your tacos from making a mess, I love using these taco holders.
This is usually a lunch for me, but when serving at dinner I like to make Mexican Rice with it, too.
Garnish with guacamole, salsa, and Moocho Fiesta Shreds.
