Chicken & Yellow Rice

Delicious, easy, 30 minute dairy free meal

Ingredients:

2-3 chicken breasts
1 package yellow rice (we use Vigo brand or Publix brand, as they’re dairy free)
Chicken Broth as required on the package (I use Orrington Farms Bone Broth Base, it’s dairy free and gluten free… and it’s cheaper on Amazon)
Salt and Pepper
Olive Oil

Instructions:

Cook the chicken breast in a medium pan with oil, salt, and pepper. Keep it simple because the rice has plenty of flavor. Cover the pan and cook over medium heat to keep the chicken from drying out.

Follow the instructions on the package for the rice.

Once it’s reached 165 degrees Fahrenheit, remove the chicken from the pan and let it rest for 5 minutes. Dice and mix into the rice.

Serve with a vegetable, we use broccoli or green bean usually.
