fall comfort food at its finest!

Dorothee’s Pasta is a fall staple in our house! I hope you love it!
Ingredients:
2-3 large sweet potatoes, diced (or 2-3 bags of frozen sweet potatoes)
1/2 a large onion, diced
2T minced garlic
1 package mild or sweet Italian Sausage
3 cups chopped kale
16oz whole wheat pasta
Roast the sweet potatoes with oil and salt until brown. While they’re roasting, boil the pasta. Cook the sausage until brown, remove from pan and cook onion until brown. Add garlic until fragrant. Combine everything in a pan or bowl, add the kale, and cover to let it wilt. Add butter, stir, and serve.
