Dairy Free Zuppa Tuscana

I make this in the Instant Pot, but you can definitely do it in the crock pot instead, you just need to start it earlier in the day.

2lbs Italian sausage (I used 1 mild and 1 sweet)
7-8 diced potatoes
1 medium sweet onion, diced
2T minced garlic
7 cups chicken broth
1/2 bunch of kale
1 cup cream (I use Country Crock Plant Cream)

  1. Peel & dice potatoes, set aside
  2. Use the saute mode to cook sausage until brown, set aside on a paper towel to soak up the grease.
  3. Cook the onion in remaining grease and add garlic at the end until fragrant.
  4. Pour in chicken broth and use a wooden spoon to remove the bits of sausage from the bottom of the pot. (note: if you don’t do this you risk getting a burn notice from your IP)
  5. Add the sausage back into the pot.
  6. Seal the valva and pressure cook for 5 minutes, then quick release (takes about 7 minutes).
  7. Add kale, and cover to let it wilt.
  8. Stir in plant cream.
  9. Serve with homemade sourdough (I use this recipe) or french bread.
