I typically double this recipe so I don’t have to make it as often. If you choose do that, you do not need to adjust the cooking time.
Ingredients:
1/4 cup Maple Syrup
1/4 cup Avocado Oil
6 cups Whole Oats
1/2T ground cinnamon
1/4 cup brown sugar
1t salt
Add ins (these are optional. You can use some or all or substitute what you like in there. The options are endless!)
1 cup chopped Pecans
1 cup raisins
1 cup shredded coconut
- Preheat oven to 250°F.
- Chop the pecans and set aside.
- (optional) measure everything to start, this reduces the time it takes to put together.
- Pour the oil and syrup in a large bowl. Whisk the two together until thick.
- Add everything else and stir. The one I use is from Pampered Chef, which I highly recommend. Find your local PChef consultant.
- Once well, incorporated, pour the mixture onto a large baking dish lined with parchment paper or a silicone mat.
- Cook for 90 minutes, stirring every 20 to 30 minutes. Once the raisins plump, it’s done.
- Let the granola cool, and store in an airtight container. I use these – I may or may not have three sets of them.
- Serve with milk or yogurt. We love Forager Project’s dairy free yogurt.
Enjoy!
