the viral dinner that stole my son’s heart

Long before I was on TikTok, I heard about the viral TikTok pasta and decided to make it dairy free. It’s since been an easy dinner that satisfies the whole family. Especially my cherry tomato loving son! This recipe can easily be made gluten free. See notes at the end.
Ingredients:
- 2-3 chicken breast (can cube if desired)
- 1 package cherry tomatoes, halved
- 1 tub of Follow Your Heart Parmesan (grated or shredded)
- 12oz pasta of your choice (we use whole wheat penne for fuller bellies)
- Olive oil, salt, and pepper
Instructions:
1. Preheat oven to 375°F
2. Remove the lid and plastic cover from the Parmesan
3. Leaving the Parmesan in the tub, carefully place the tub upside down in the pan and leave it there.
4. Around the tub, place the chicken and cherry tomatoes
5. Lightly salt and pepper the chicken and tomatoes
6. Carefully remove the tub, most of the cheese will be in a mound in the middle.
7. Generously pour olive oil over the cheese.
8. Place in the oven, uncovered, for 30-35 minutes or until sauce is boiling and chicken reaches 165°F
9. Meanwhile, boil the pasta of your choice* and cook any sides you want to serve with your dish
10. Enjoy!
Note: When serving with gluten free pasta, keep the leftover pasta and sauce mixture separate. When it’s time to reheat the pasta, place it into a colander and pour boiling water over it. It’ll spring back like it’s freshly cooked without breaking apart.
