Chicken Chorizo Pasta

I realized, as I was editing the reel for this recipe that I used to make it as a bake. So I’ve added that optionally below. It’s great either way!

Ingredients:

  • One package, chorizo, diced
  • 1 pound chicken breast, diced
  • One medium onion, diced
  • One large can tomato sauce
  • 1 Package Moocho mozzarella
  • Salt and pepper

Instructions:

  • If baking, preheat oven to 375°F
  • Cook the onion over medium heat in oil or butter, salt lightly
  • Cook the diced chorizo in the pan with the onion
  • When the oils have released, add the diced chicken and cook thoroughly
  • Boil pasta. (Keep it a little undercooked if baking.)
  • If baking, add pasta, chicken chorizo mix, and tomato sauce to a 9×9 square baking dish. Stir lightly and bake for 20 minutes, add Moocho Mozzarella and bake for 5 more minutes. I like to add a bowl of boiling water to create steam in the oven, as this helps the cheese melt better.
  • Otherwise, add the tomato sauce into the pan with your chicken chorizo mix. Service over pasta and top with Moocho Mozzarella.
