classic easy dinner

Ingredients:
- 1lb chicken breast or thighs
- Olive oil
- Salt and pepper
- 1 package of mahtama yellow rice*
- chicken broth
Instructions:
- Slice the chicken breasts in half so they’re thin and lightly salt and pepper one side.
- Place then seasoned-side-down in a preheated pan with oil, over medium heat.
- Once seared, flip and cover. Reduce heat to medium-low.
- When the meat is cooked to 165*F, remove and let it rest.
- Heat chicken broth in a sauce pan.
- Once heated, pour in the yellow rice, stir, and cover. Reduce heat to just a simmer.
- Let simmer for 20 minutes or until top layer of rice is cooked through (do not stir at all during this time.)
- Dice the check and pour it along with any juices from the cutting board or sauté pan into the rice.
- Stir and serve with your favorite vegetable.
