classic easy dinner

Ingredients:

  • 1lb chicken breast or thighs
  • Olive oil
  • Salt and pepper
  • 1 package of mahtama yellow rice*
  • chicken broth

Instructions:

  1. Slice the chicken breasts in half so they’re thin and lightly salt and pepper one side.
  2. Place then seasoned-side-down in a preheated pan with oil, over medium heat.
  3. Once seared, flip and cover. Reduce heat to medium-low.
  4. When the meat is cooked to 165*F, remove and let it rest.
  5. Heat chicken broth in a sauce pan.
  6. Once heated, pour in the yellow rice, stir, and cover. Reduce heat to just a simmer.
  7. Let simmer for 20 minutes or until top layer of rice is cooked through (do not stir at all during this time.)
  8. Dice the check and pour it along with any juices from the cutting board or sauté pan into the rice.
  9. Stir and serve with your favorite vegetable.
