Easy Homemade Pancakes

Ingredients:

  • 11/2 cup all-purpose flour
  • 3 teaspoons baking powder
  • 3 tablespoons coconut sugar (you can use white sugar, but they come out more fluffy with coconut sugar for some reason)
  • 1 egg, beaten well
  • 11/2teaspoon salt
  • 5T tablespoons vegetable oil or olive oil
  • 11/2cup almond milk (oat milk works too)

Instructions:

  1. Place sugar, all-purpose flour, salt, and baking powder in a large bowl. Whisk together.
  2. Make a well in the center of all these ingredients then add the wet ingredients. Pour egg, oil, and milk in the middle then mix all ingredients until the pancake batter has a smooth texture.
  3. Heat your griddle pan and put it over medium heat. Add a tablespoon of butter or oil to lightly coat the pan. Use ¼ cup of batter for each pancake.
  4. Cook the until the pancake starts to bubble. This will take about two minutes then use a spatula to flip the pancake over. Cook the other side for another 2 minutes or until both sides are golden brown.
  5. Continue until all the pancakes are cooked. You may need to add a little oil every 2-3 batches.
  6. Serve with butter, maple syrup, and/or fruit slices.
  7. Enjoy!
