Ingredients:
- 11/2 cup all-purpose flour
- 3 teaspoons baking powder
- 3 tablespoons coconut sugar (you can use white sugar, but they come out more fluffy with coconut sugar for some reason)
- 1 egg, beaten well
- 11/2teaspoon salt
- 5T tablespoons vegetable oil or olive oil
- 11/2cup almond milk (oat milk works too)
Instructions:
- Place sugar, all-purpose flour, salt, and baking powder in a large bowl. Whisk together.
- Make a well in the center of all these ingredients then add the wet ingredients. Pour egg, oil, and milk in the middle then mix all ingredients until the pancake batter has a smooth texture.
- Heat your griddle pan and put it over medium heat. Add a tablespoon of butter or oil to lightly coat the pan. Use ¼ cup of batter for each pancake.
- Cook the until the pancake starts to bubble. This will take about two minutes then use a spatula to flip the pancake over. Cook the other side for another 2 minutes or until both sides are golden brown.
- Continue until all the pancakes are cooked. You may need to add a little oil every 2-3 batches.
- Serve with butter, maple syrup, and/or fruit slices.
